Hi again from my little corner of NC. Life has once again thrown me a curveball – I’m beginning to think life is just a bunch of curveballs! I’m recovering from gallbladder surgery as I write this. For those of you keeping score – yes, mark down three surgeries in less than two years for me. Oh, joy. Seriously, it’s not the worst surgery I’ve had. (That would be my total thyroidectomy.) Or the worst symptoms before (that would be my parathyroid surgery.) Not that I’d have my gallbladder out for kicks and giggles, but I’m doing okay. And eagerly anticipating complete recovery.

So, what have I been doing in the meantime? Well, I’m finally feeling more like myself and eagerly planning some future topics here. I’m also enjoying my husband’s TLC and amazing cooking! As frequent readers know, I’m a meal planner. Because of that, and since my surgery wasn’t an emergency situation (thank goodness!), I was able to plan easy to fix meals for the Hubster to make for our family. On our menu this past week? Crockpot Chicken Noodle Soup, Sesame Honey Chicken served over rice, Pollo Sabroso and Mexican Rice (I felt well enough to help a bit with this one), Spicy Thai Noodles, and today’s meal – Crockpot Rotisserie Chicken with Crockpot “Baked” Potatoes. We also had simple French Toast on a day when he was just too overwhelmed to think about really cooking. It was delish and really hit the spot.
